Bamboo Rice (Mulayari) Payasam -Sweet treat for diabetics

Mulayari payasam is a delicious  dessert made of bamboo seeds. Bamboo Rice  is a highly nutritional seed obtained from bamboos. People with diabetes are often forced to stay away from payasams over health concerns. But they can have this  bamboo rice payasams without any tension.

  • Mulayari – Bamboo Rice – 1 cup 
  • Coconut Milk – 4 cup (first milk -1 cup and  second milk-3 cups)
  • Sugar or  Jaggery  – 1 cup
  • Condensed milk /Milk maid – 1 cup
  • Raisins,cashew nuts – 10 gram
  • Cardamom powder – one pinch
  • Ghee – 1 tablespoon

Wash the Bamboo rice for several times.  Drain and soak the rice in water for 20 to 25 minutes

Cook the rice with second coconut milk,when it starts to boil add condensed milk and sugar

Keep stirring this mixture reaches to a semi soild consistency.  The add the first milk and simmer for a while.Add cardamom seeds powder and gently mix it

Heat 1 tablespoon of ghee in a pan roast  cashew nuts and raisins. Garnish payasam with this roasted nuts  and serve hot
