Beef Ularthiyathu or Roasted beef fry

Beef Ularthiyathu or Roasted beef fry is one of an ever loved, hot and spicy non-veg recipe from South India.

Beef Ularthiyathu or Roasted beef fry goes well with different dishes like Chapati, Palappam, Kallappam, rice and bread. Garam masala, coriander powder, turmeric powder and red chilly powder are the spice powders used in this recipe. Claypots, Deep frying pan or heavy-bottomed Kadai are the typically used cooking utensils for frying. Slow and continued frying for a long time is the reason behind its dark brown texture. The use of finely sliced onion or shallots did play a significant role in its unique taste and aroma. Freshly grounded spice powders can be used instead of the one’s purchased from the shops. For marination
  • 400 gm of beef (Sliced to small cubed pieces).
  • 2 teaspoon of chopped ginger pieces
  • 2 teaspoon of garlic
  • 1/4 teaspoon of turmeric powder
  • 2 teaspoon of masala powder  (How to make masala powder?)
  • Salt for the taste

For roasted frying
  • 1 medium sized onion (sliced to fine pieces)
  • 1/2 cup of finely sliced coconut bits
  • 2 teaspoon of finely chopped ginger
  • 2 teaspoon of finely chopped garlic
  • 2-3 green chillies
  • 2-3 sprigs of curry leaves
  • 1/4 teaspoon of turmeric powder
  • 4 teaspoon of masala powder (How to make masala powder?)
  • Coconut oil for frying
  • Salt for the taste
Method of preparation
  • Marinate the beef with the marinating ingredients mentioned above. Keep it aside for half an hour.
  • Pressure cook the beef pieces with 1/4 cup of water. Heat it to 3 whistles.
  • Switch off the flame. Keep the cooker aside and wait for the pressure to subside.
  • Meanwhile, heat some oil in a Kadai or heavy bottom pan, keep the flame in medium range.
  • Add the coconut bits, stir fry it so that it gets fried to a light brown colour.
  • Add ginger, garlic, green chilies, sliced onion, curry leaves and some salt. Saute it for few minutes. Once the onion gets to golden brown colour, add the turmeric powder and the masala powder.
  • Saute it for few seconds and add the cooked beef pieces along with the gravy.
  • Heat it to a dry state in a low-medium flame. Check for the taste. If required, add a pinch of masala powder and the pepper powder.
  • To get a dark brown coloured Ularthu recipe, pour some more oil and continue frying.
  • Once it is ready, serve it hot with rice, chapati or appam.
