Bili Holige or Stuffed rice flour Paratha

Stuffed rice flour Paratha or Bili Holige is a traditional savoury dish from Karnataka. In Kannada language ‘Bili’ means white and ‘Holige’ means stuffed paratha. It has many similarities towards other Paratha recipes, but the outer surface is made of Maida or all-purpose flour dough and stuffing is entirely made of white coloured rice flour dough. This recipe goes well with Baingan, Ennegai palya or any other spicy gravy recipes. Ingredients used for making Stuffed rice flour Paratha or Bili Holige
  • 2 cups of All-purpose flour
  • Water as per the requirement (nearly ½ cup of water)
  • 2 teaspoons of oil
  • ½ teaspoons of salt
For the stuffing
  • 1 cup of Rice flour
  • 1¾ cups of Water
  • 1 teaspoon of Jeera / Cumin seeds
  • Salt for the taste

Method of preparation of Stuffed rice flour Paratha or Bili Holige
  • Take the maida or all-purpose flour in a mixing bowl, add the oil and some salt for the taste.
  • Pour some water and mix it to form a smooth dough. The dough should not be too soft or stiff. It should be like chapatti dough, use a damp cloth and cover the dough for 30 minutes.
  • Meanwhile, heat 1¾ cup of water in a pan. Once it starts to boil, add the some oil and salt for the taste.
  • Reduce the heat to a low flame and slowly add the rice flour. Use a wooden spatula and constantly stir the contents.
  • Once the whole of the rice flour is wet and forms the lumps, switch off the flame. Keep it aside so that the rice flour mixture becomes cold.
  • Once it is slightly warm, knead it well to form a smooth dough. The stuffing of Bili Holige is ready. Divide the rice flour dough into lemon sized dough pieces.
  • Take out some all-purpose dough and roll it to form a small ball shaped dough piece, use a chapatti roller and roll it to form a small circular shape.
  • Keep a lemon sized rice dough on the centre of the flat shaped all-purpose dough and cover it well on all sides to form a ball shaped dough piece.
  • Use the chapatti roller and roll it again to form a flat chapatti shape.
  • Heat a tawa or griddle and once it is hot, keep the stuffed rice flour paratha on top. When it puffs up, sprinkle few drops of oil on the corner and flip it to the other side.
  • Once it is cooked and ready, take it off from the tawa and transfer it to a plate.
  • Serve this hot and savoury stuffed rice flour Paratha or Bili Holige along with some spicy gravy recipe.
