Chicken roast is one of a spicy chicken recipe popular in Kerala.

Chicken roast recipe goes well with many of the dishes like Appams, Chapati, Rice, Parotta etc. It can be made with some gravy or in a dried form. The reddish brown colour of the recipe is due to the presence of red chilli powder. The use of red chilli powder and the green chillies imparts a spicy flavour. The presence of sauteed onion pieces and curry leaves would increase the taste and the aroma. It would take about 40 -45 minutes for the preparation of this recipe. Ingredients used for making Chicken roast dry recipe
  • 500gm of Chicken (cut into medium sized pieces)
  • 2 big sized Onion (sliced to fine pieces)
  • 1½ teaspoon of Red chilli powder
  • 2 medium sized Green chillies (slit to 2 pieces)
  • 1 teaspoon of Turmeric powder
  • 2 teaspoon of Coriander powder
  • 1/2 teaspoon of black pepper powder
  • 1 teaspoon of Garam masala
  • 3 teaspoons of Ginger Garlic paste
  • A sprig of Curry leaves
  • 1/2 cup of Chicken stock or warm water
  • 1 medium sized Tomato (sliced to fine pieces)
  • 5 tablespoon of Oil
  • Salt for the taste

For marinating the chicken pieces
  • 1½ teaspoon of Red chilli powder
  • ½ teaspoon of turmeric powder
  • 2 teaspoon of ginger garlic paste
  • 1 teaspoon of lemon juice
  • Salt for the taste
Method of preparation of Chicken roast dry recipe
  • Wash and clean the chicken and cut them into medium sized pieces.
  • Take all the marinating ingredients in a mixing bowl. Add some water and mix it to a paste.
  • Now, add the cleaned chicken pieces and mix it well. Keep this in the fridge for half an hour.
  • Heat some oil in a deep frying pan and roast the marinated chicken pieces to a golden brown colour. Take it away from the pan and keep it aside.
  • Now add the sliced onion pieces and the curry leaves. Saute it for 15-20 minutes as the onion turns to a golden brown texture, add the ginger garlic paste and the sliced green chillies. Saute it for few minutes.
  • Add the red chilli powder, pepper powder, turmeric powder, coriander powder, garam masala and some salt for the taste. Saute it for a minute.
  • Now, add the chicken pieces and mix it well. For a dry recipe, cook the ingredients with a closed lid for 5-6 minutes and take off the dish from the flame. Chicken roast dry is ready and serve it hot.
  • If you need a recipe with some gravy, add ½ cup of chicken stock or warm water, cover the lid of the pan and cook it for 5-6 minutes.
  • And if you like the taste of tomatoes, you can add the sliced tomato pieces and cook for further 5 minutes. Switch off the flame and transfer it to a serving bowl.
  • Chicken roast with gravy is ready, serve it with rice, chapatti, Appam etc.
