Delicious and Simple Beetroot Halwa recipe

Beetroot halwa is a delicious dessert dish which is usually prepared during hot summer season. This chilled, creamy and delicious recipe can even be served to toddlers or kids after school as it is quite a filling dish. Sweet flavoured halwa’s are usually made of semolina, flours, lentils, nuts or grated veggies like pumpkin, carrot, gourd. It can be prepared with the use of milk or without the milk. Ingredients used for making Beetroot Halwa
  • 2 cups of grated Beetroot
  • 3 tablespoon of Sugar
  • A pinch of green cardamom / Elaichi powder
  • 1 cup of milk
  • 1 teaspoon of Ghee
  • Few broken Cashew nuts

Method of preparation
  • Wash the beetroots under running water and use a sharp knife and peel off its skin.
  • Grate the beetroot into small sized pieces.
  • Heat the milk in a pan, bring it to a boil, reduce the flame to a low range and stir the milk using a ladle or a long spoon.
  • Heat a deep frying pan and add the ghee. Now, add the broken cashew nuts for frying. Fry it to a golden brown texture and keep it aside.
  • Add the grated beetroot pieces to the same pan and fry it for 2-3 minutes so that it gets aromatic.
  • Slowly pour the thick milk and continue the cooking until the milk is completely absorbed. By this time, the beetroot pieces will become soft and be cooked well.
  • Now, add the sugar and the cardamom powder. Ensure that the beetroot pieces are soft and cooked well before adding the sugar.
  • Sugar crystals would melt and the moisture is released.
  • Continue cooking till the moisture gets fully evaporated and if you prefer a dried halwa, continue cooking.
  • Once it is ready, transfer it to a serving bowl. Garnish it with the roasted cashew nut pieces.
