Oats and vegetable upma -Healthy breakfast recipes

Vegetble oats upma Natureloc

  • Oats, roasted – 100 gm
  • Lemon juice – 4 tsp
  • Water – 1 cup
  • Turmeric powder – a pinch
  • Salt to taste
  • Green peas – 20 gm
  • Carrot – 20 gm,chopped and blanched
  • French beans – 20 gm chopped and cooked
  • Green chillies – 2 chopped vertically
  • Ginger,chopped – 2 tsp
  • Onion – 1 sliced
  • Cashewnuts – 2 tsp
  • Moong dal,urad dal – 1 tsp each rinsed
  • Mustard seeds – half tsp
  • Ghee – 1 tbsp
  • Curry leaves – a few

Method

  • Heat 3/4 tbsp ghee in a deep frying pan over high heat.
  • Add mustard seeds,curry leaves,urad dal and moong dals.  Saute for a minute.
  •  Add sesame seeds and cooks over low heat
  • Add onion,ginger and green chillies.  Cook until onion become transparent.
  • Add beans,carrots and peas and cook.
  • Add turmeric powder and water.  Season with salt and mix well.
  • Bring to a boil and reduce the heat and cover.
  • Let it cook until the water is half absorbed
  • Add oats, mix well and cover.  Let it cook until all the water is absorbed an the oats are flaky.
  • Remove from heat.
  • Add lemon juice.
  • Fry cashew nuts in 1/4 tbsp ghee and garnish the upma
