Pacha Payar or Achinga Payar Mezhukkupuratti, Long Beans Stir Fry is a common recipe popular in Kerala. Long beans or Achinga is a readily available vegetable across South India. Stir fried long beans is best served as a side dish for hot steaming rice. Sliced coconut bits are used in this vegan side dish for an extra nutty flavour and crunchiness. The use of green chillies or red chilli powder gives a spicy flavour. Earlier, beans were cooked with some water, coconut bits and salt at first and then transferred to a kadai for sauting. Nowadays, people skip this process and directly cook and sauté the beans in kadai. Curry leaves are also used in this recipe for an improved taste. Ingredients
  • 500gm of Pacha Payar or Achinga Payar / Long Beans Stir Fry
  • A handful of finely sliced shallots / Cheriya Ulli
  • 2-3 Green chillies (Slit to two pieces)
  • 1-2 tablespoon of chopped Coconut bits / Thenga Kotthu
  • ½ teaspoon of Turmeric powder
  • 2-3 tablespoon of water (As per the requirement)
  • A Sprig of curry leaves
  • 2 tablespoon of Coconut oil
  • Salt for the taste
Method of Preparation
  • Wash the Long Beans, Pacha Payar or Achinga Payar in running water or immerse it in clean water for some time to remove the impurities. Transfer it to a vessel or leave it on a strainer.
  • Using a knife, cut the beans to get ¾ inch pieces.
  • Heat a kadai and pour some coconut oil, once it gets hot add the shallot pieces, green chillies, coconut bits, turmeric powder and mix it with a ladle.
  • Now, add the beans pieces and add some salt for the taste. Mix it well.
  • Adjust the flame and allow the ingredients to get cooked.
  • Use a low flame for sauteeing and make sure that you stir the ingredients in between to avoid over frying.
  • Once the beans pieces get a light brown texture, switch off the flame and keep it aside
  • Transfer the dish to a serving bowl. Serve it as a side dish for rice.
