Palak Coriander Spicy Chutney Pulao

How about a spicy chutney pulao for an adventurous food party? If you’re not really a fan of palak (spinach,you can readily replace it with pudina (mint)it does not change the final taste.

Ingredients

  • Basmati Rice – 1 cup
  • Palak (spinach) – 1/2 cup
  • Coriander leaves – 1/2 cup
  • Green chillies – 4
  • Ginger – 1 inch piece
  • Lemon juice – 2 tbsp
  • Sugar – 1 tsp
  • Coconut – 2 tbsp
  • Garam Masala – 1/2 tsp
  • Bay leaves – 2
  • Cloves – 3
  • Cinnamon – 1 inch stick
  • Cardamom – 2
  • Ghee/Oil – 1 tbsp
  • Onion – 1 (big)
  • Chopped Vegetables
  • (Green beans,carrot,peas,cauliflower) – 1 cup
  • Salt

Method

  • Grind together palak, coriander leaves,green chillies, ginger, garlic,lemon juice, coconut, sugar and garam masala without water (if required,ad a little water)
  • Heat ghee,add bay leaves,cloves, cinnamon, cardamom and garlic.  Fry for a minute
  • Add onions and fry till they turn slightly brown
  • Add vegetables ad the ground paste – fry for five minutes
  • Now add rice, toss and add one cup of water,salt
  • Cover and let it cook till one whistle
  • Can be served with onion raita
