Simple home made sweets recipes – Rava (Sooji) ladu – Payasam – Kesari

Rava Kesari – A delicious and simple sweet for any occasion

Ingredients 

Rava: 1/2 cup

Water- 3 cups

Kesari colour or orange food colour – 2 pinches

Sugar-3/4 to 1 cup (you can adjust the sugar according to the sweetness you want)

Melted ghee: 3 tbsp

Cardamom powder: 1/4 tsp

Cashew nuts: 5-6 nos

  • Heat a non-stick tawa and add 1/2 tbsp of melted ghee. Roast the cashews and set aside.
  • In the remaining ghee, add the rava and roast it in medium flame for 3 minutes till it gives the roasted smell.
  • After roasting it, keep it aside in a plate, which is greased with a drop of ghee.
  • Add 3 cups of water in to the heated tawa and add 2 pinches of Kesari colour.
  • When the water starts to boil, reduce the flame and add the rava, slowly with continuous stirring.
  • Mix well and keep the tawa covered with a lid and cook for 5 minutes.
  • Add sugar slowly and mix well. Once, the sugar is melted, add ghee and stir well.
  • Remove from the flame and transfer it to a plate which is greased with ghee.
  • Keep it for 10 minutes and if you want to cut the diamond shape. Else you can serve it using a ladle.

Rava Payasam – Sooji Cashew Kheer  Semolina Payasam 

Ingredients :
Milk-750 ml
Water-250 ml
Rava- 5 tbsp
Sugar-1/2 cup
Cardamom powder- 1/2tsp
Ghee-1 tbsp
Cashew nuts and raisins – a few
Saffron strands- a few

Method

  • Heat one tbsp ghee in a pan. Roast the cashew nuts till golden brown. Remove the cashews from flame and keep aside.
  • Add the raisins, roast well and keep it aside.
  • Add rava to the ghee and roast till pink on medium flame.
  • Remove from the flame and allow it to cool.
  • Add milk to the water and allow it to boil. Reduce the flame and add the roasted rava slowly. The milk will start thickening. Keep stirring and allow the rava to cook well. Add sugar and mix well. Allow the sugar to dissolve completely.
  • Add the cardamom powder and mix.
  • Remove the payasam from the flame and serve in bowls and garnish with cashews, raisins and saffron strands.

Rava Ladu – Indian sweet made during Diwali

Rava – 200 gm
Condensed milk-1/2 cup
Desiccated coconut -1/4 cup
Milk- 12 tbsp
Ghee- 2/ tbsp
Sugar-1/2 cup
Cashew nuts- 12 nos, chopped
Raisins- 1 tbsp
Cardamom powder -1/2 tsp

Method

  • Heat ghee in a pan. Add the rava and chopped cashew nuts. Roast the rava on a low flame till it changes to pink and there is a roasted fragrance .
  • Add the desiccated coconut and roast for a minute.
  • Add the condensed milk to the rava and stir well.
  • Add sugar and mix well with the rava.
  • Add cardamom powder and raisins and stir well.
  • Add milk in parts while stirring. Once the milk is absorbed and the sugar has dissolved, remove the pan from the fire.
  • Grease your palms with ghee and form laddus, when the mixture is still hot. Store in an air-tight container.
