Soft and nutritious Ragi Mudde is one of a popular recipe from Karnataka cuisine. Ragi flour and water are the essential ingredients used in this dish. This ball shaped ragi recipe does not have a strong flavour, it is traditionally served with saaru, sambar, yogurt or buttermilk. It is known by the name ‘Ragi sankati’ in Andhra Pradesh and ‘Ragi Kali’ in Tamil Nadu. Ragi belongs to the millets family and is a rich source of calcium than wheat or rice. Higher fibre presence helps in preventing the rise of blood sugar level. Ingredients used in Ragi Mudde
  • ½ cup of Ragi flour
  • 1 cup of water
  • Salt for taste

Method of preparation of Ragi Mudde
  • Mix 1 tablespoon of ragi flour in mixed with water to form a very thin paste. Keep it aside.
  • Heat some water in a thick bottomed pan. Add the prepared ragi flour paste.
  • Bring it to a boil and as this mixture reaches to the brim of the vessel, add the ragi flour.
  • This forms a mound on top of the boiling water.
  • Cook this mixture on a medium high flame.
  • Use a wooden ladle or stick in mixing the contents to form a smooth dough. Make sure that there are no lumps.
  • Heat the mixture in a low flame and round them into tennis sized balls.
  • Serve this dish with saaru, sambar, yogurt or buttermilk.
