Soft and puffy Kuzhi Paniyaram recipe

Kuzhi Paniyaram is a famous South Indian dish popular among the people from Tamil Nadu, Karnataka and Kerala. It is also known by different names like Paddu, Gulittu, Appe, Gundponglu and Ponganalu.  Idli or dosa batter is used for making this soft and fluffy recipe. Paniyaram recipes exist in two different flavours, namely sweet and spicy. Here we are discussing the preparation of spicy Kuzhi Paniyaram variety. It is usually prepared on a special pan which contains multiple small fissures. The presence sliced green chillies provides a hot spicy flavour. Ingredients used in Kuzhi Paniyaram
  • 2 cups of Idli batter
  • 3 teaspoons of Oil
  • 1 teaspoon of Mustard seeds
  • A pinch of Urad dal
  • 1 medium sized Onion
  • 1-2 finely chopped green chillies
  • 1-inch piece of fresh Ginger
  • Few Curry leaves
  • Few finely chopped coriander leaves
  • Salt for the taste

Method of preparation of Kuzhi Paniyaram
  • Heat 2 teaspoons of oil in a deep frying pan. Add the mustard seeds.
  • When the seeds splutter, add the Urad dal and saute it for few seconds.
  • Once it attains a light golden brown texture, add the finely chopped onion pieces, green chillies and curry leaves.
  • Saute it for few minutes. Once the onion pieces attain a light transparent texture, add some salt for the taste and sprinkle the coriander leaves. Keep it aside for cooling.
  • Once the heat is reduced, add this ingredient to the idly batter. Mix it well and the Paniyaram batter is ready for preparation.
  • Now, heat a paniyaram pan on a medium flame and add 2-3 drops of oil on each of its holes.
  • Add a teaspoon of paniyaram batter on each of these holes.
  • Reduce the heat to a medium – low range and close the pan with a lid.
  • Once the edges of each paniyaram attain a light golden texture, flip it using a spoon.
  • Cook for few minutes, as the whole of kuzhi paniyaram become a light golden brown colour.
  • Now, remove from the pan and transfer it to a serving bowl.
  • Serve it as a breakfast recipe or as an evening snack along with tomato chutney or kara chutney or sambar
