Soup Recipes – Easy Homemade Chicken Soup recipe

Soup is known to be a primarily liquid food made of combination of ingredients like meat and vegetables with stock, water or juice. Generally, soups are served as a warm dish, prepared by boiling cleaned solid ingredients in a pot which extract the flavours forming a broth. This is an easy chicken soup recipe with a delightful hot spicy flavour. It makes use of some of the spices like cumin seeds, turmeric powder and black peppercorns for a unique flavour. A small amount of ginger garlic paste is also used for an increased natural aroma and flavour. Chopped tomatoes and carrots (optional) combines well with the meat extracts. Ingredients used 
  • 200gm of Chicken
  • ½ teaspoon of Cumin Seeds (Jeerakam / Zeera)
  • ¼ teaspoon of Turmeric powder
  • 1 teaspoon of Black Pepper Corns
  • ½ teaspoon of Ginger garlic paste
  • ¼ cup of chopped Tomatoes
  • ¼ cup of freshly chopped Coriander leaves (Cilantro / Malliyila)
  • Few sprigs of curry leaves
  • 1 cup of Water
  • 2 teaspoons of Sesame Oil (Nallenai / Gingely oil)
  • Salt for the taste ( ½ teaspoon)
For cleaning the chicken pieces
  • A pinch of Turmeric powder ( ¼ teaspoon)
  • ½ teaspoon of Sesame Oil (Nallenai / Gingely oil)
Method of Preparation
  • Wash the tomatoes in running water and chop it into small pieces. Wash the coriander leaves and chop it to fine pieces. Also, wash the curry leaves and keep it aside.
  • Using the water, clean the chicken and keep it aside, drain the water and sprinkle some turmeric powder and some sesame oil. Mix it well.
  • Clean the chicken pieces once more and keep it aside. Washing this way would remove the raw chicken smell.
  • Boneless chicken pieces are good for soup preparation hence slice the chicken to bite sized pieces. Keep it aside.
  • Take the black peppercorns and the cumin pieces in a mixie, ground it to a coarse mixture.
  • Take out a pressure cooker and add the bite-sized chicken pieces, turmeric powder, coarsely ground mixture of black pepper and cumin seeds, sesame oil, curry leaves, some chopped coriander leaves, ginger garlic paste, coriander powder and tomato pieces.
  • Sprinkle some salt for the taste and mix it well. Close the lid of the cooker and cook it on a high flame.
  • Cook it for 1 whistle and reduce the flame to a low range, continue cooking for 10 more minutes.
  • Switch off the flame and wait for the pressure to subside. When the pressure gets reduced, open the lid and add the remaining chopped coriander leaves.
  • Check for salt and pepper flavour. If required add some salt and pepper powder. Mix it well and transfer it to serving bowl.
  • Serve it as hot chicken soup.
