Unnakkaya means the pod of the cotton tree and lends its name to this dish because of the similarity in shape of the sweet. Unnakkaya or Coconut filled Plantain Fritters is a delicious,sweet,traditional Kerala snack especially in Kannur, Kozhikodu, Thallassery  It is prepared by filling bananas (smashed) with grated coconut and cashew nuts.  Ripe banana and coconut is the main ingredients,  Banana is rich source of Vitamin C and potassium .   It helps the body develop resistance against infections,potassium controls blood pressure and heart rate.  coconut helps to prevent obesity,high in dietary fiber and improves digestion. This tasty snack easy to prepare  at home by spending less time

Ingredients

  • Ripe plantains (Bananas)  – 1 kg
  • Sugar – 1/2 cup
  • Fresh coconut grated – 1/2 medium sized
  • Eggs – 5 well beaten
  • Cardamom – 4 nos powdered
  • Oil – 1 cup

Method – How to prepare Unnakkaya?

  • Peel plantains and cut into 5 cm pieces
  • Steam plantains for 10 minutes and grind to a fine paste
  • Place sugar with 1 cup water in a pan over moderate heat and stir till sugar dissolves.  Bring to boil and boil till syrup thickens
  • Add coconut and keep cooking and stirring till it dries
  • Add eggs and cardamom powder and continue to cook and stir till completely dry.  Remove from heat and allow to cool
  • Shape plantains paste into small balls and flatten on your palm.  Place 1 tsp coconut mixture in the center and cover with plantain paste to form oval fritters
  • Heat oil in kadai and deep fry fritters till golden brown
  • Remove from oil,drain and serve warm
