Baked Vegetable Samosa


  • Potato,peeled and quartered – 1
  • Carrot ,peeled and halved – 1
  • Cauliflower florets -5
  • Sunflower oil – 1 tsp +extra for brushing
  • Lime juice – 2 tsp
  • Water – 1 tbsp
  • Small onion chopped -3
  • Frozen peas – 3 tbsp
  • Green chillies deseeded and finely chopped – 3
  • Cumin seeds – 1/2 tsp
  • Mustard seeds – 1/2 tsp
  • Beaten egg to brush
  • Coriander chutney to serve for the pastry
  • Barley flour – 40 grams
  • Wheat flour- 125 grams +extra for dusting
  • Salt – pinch
  • Sunflower margarine – 40 grams
  • Skimmed milk – 5- -75 ml


  • Preheat the oven to 190 degrees C.
  • Cook the potato,carrot and cauliflower in small saucepan of boiling water for 10 minutes.
  • Drain,leaves to cool slightly,then chop or mash,
  • Take oil,lime juice,water,small onions,chopped chillies, peas and spices in a small pan bring to the boil,then reduce the heat and simmer gently,stirring occasionally,for 3 minutes.
  • Stir in the potato, carrot and cauliflower and transfer to a bowl to cool.

To make the pastry,

  • Sift the wheat flour and barley flour into a bowl, add margarine,salt and rub it in with your fingertips until the mixture resembles breadcrumbs.
  • Add just enough milk to make firm dough.
  • Turn out to a lightly floured work surface and knead gently until smooth.
  • Divide the dough into equal parts and roll each out into 7 inch round.
  • Trim the edges a cut each round in half.
  • Brush the baking sheer with a little sunflower oil.
  • Divide the vegetable mixture between the dough semicircles, placing it on one half only and leaving a small border.
  • Brush the edges with water.
  • Fold the dough over and seal, pressing the edges with a fork.
  • Brush the beaten egg,transfer to the baking sheet and bake in the preheated oven for 20-25 minutes,or until golden brown.
  • Serve hot or cold with coriander chutney
