Healthy Baked Spinach with Cottage Cheese

Those who are diabetics have a clear list of what to eat and what to avoid. Yet there are some recipes that they can try at home without going against medical advice. For instance. the age-old favourite palak paneer, which is a popular dish in North Indian weddings. Here is another healthy option with palak and paneer

Palak and Paneer  food  – Ideal for diabetics 


Prep time:30-40 minutes

  • Fresh spinach – 1 bunch
  • Crushed garlic – 1 tsp
  • Olive oil – 1 tsp
  • Salt and pepper (as per taste)
  • Oats powder/whole oats for binding -2 tbsps
  • Cottage cheese – 1 cup

Wash fresh spinach leaves thoroughly, chop them well and keep aside.

In a non-stick greased medium name pan, add olive oil and oats powder or whole oats Saute well for a few minutes.

Add crushed garlic salt and black pepper. Mix and cook for two minutes.

Add spinach leaves and cook for another three minutes till they start absorbing water. Switch off the flame and keep aside.

Take a square piece of aluminium foil, grease with olive oil. Brush oats flour all over and place the cooked spinach on it. Now place chopped cheese evenly over it. Roll along with a foil tightly and tie it from both ends.

Now  pre-heat the grill oven and bake the roll for 20 minutes at 1800C .  Once done, let it cool for In minutes. Unwrap it and cut spinach cottage cheese into pieces and enjoy.
