Spicy Mosaru Kodubale, Crispy Rice Flour Rings using Curd

Mosaru Kodubale is a famous snack recipe popular among the people from Karnataka. In Kannada language, curd is termed as ‘Mosaru’ and ‘Kodubale’ means crispy rings. Fine rice flour and slightly sour curd are the essential ingredients used in this dish. Coarsely grind paste of green chillies would give a spicy flavour. Unlike other kodubale varieties as this snack involves curd as an ingredient, it cannot be stored for long period of time. Freshly chopped cilantro and curry leaves impart a natural taste.  Fried Mosaru Kodubale has a crispy outside with a light brown texture and a soft inner portion. Ingredients used in Mosaru Kodubale, Curd Kodbale
  • 1 cup of Rice flour
  • ½ cup of water
  • ½ cup of Sour curd
  • 1 small sized Onion (chopped to fine pieces)
  • A sprig of curry leaves (chopped to small pieces)
  • 2-3 medium sized green chillies (Coarsely grind to a paste)
  • 6-8 sprigs of Coriander leaves / Cilantro (chopped to small pieces)
  • 1 teaspoon of oil
  • Salt for the taste
  • 1 teaspoon of Oil + Oil for deep frying

Method of preparation of Mosaru Kodubale, Curd Kodbale
  • Take the curd in a deep bottom pan and add ½ cup of water, 1 teaspoon of oil, salt, chopped onion, curry leaves and green chilli paste.
  • Mix all the ingredients and heat it on a medium flame.
  • When the mixture starts to boil, add the rice flour and cover the pan with the lid. (At this instance, do not mix the ingredients)
  • Cook it for 2-3 minutes and switch off the flame. Use a ladle and mix all the ingredients, keep it aside.
  • When it is warm, knead it to form a smooth dough.
  • Grease your palms and take out a small ball sized dough, roll it to form a thick cylindrical shape with a length of 5-6 cm.
  • Join the ends of the cylindrical dough piece to get a circular ring shape.
  • Repeat the process till the whole of the dough is made into ring-shaped pieces.
  • Now, heat the oil for frying in a frying pan. Deep fry the ring-shaped dough pieces to form a lightly golden brown coloured Mosaru Kodubale.
  • Transfer it to kitchen tissue to remove the excess oil.
  • Serve this hot as an evening snack recipe.
