Simple Potato roast or Ennai Urulai Kizhangu Varuval recipe is one of the popular recipes of South India. Potatoes, onion, red chilli powder, oil and salt are the essential ingredients used in this recipe. Reddish-brown texture of the recipe is due to the use of red coloured chilli powder and turmeric powder. Few cloves of garlic and curry leaves are used for a natural taste. Potato roast recipe takes about 30 minutes for its preparation. It is usually served as a side dish for rice. Ingredients used for Simple Potato roast
- 3-4 medium sized Potatoes (peeled & chopped to cubed pieces)
- 1 large sized Onion (sliced to fine pieces)
- 5-6 Garlic cloves (chopped to fine pieces)
- A handful of Curry leaves
- 4-5 tablespoon of Oil
- 2 teaspoon of fennel seeds powder
- 1 tablespoon of Red chilli powder
- 1 teaspoon of turmeric powder / Manjal Podi
- Salt for the taste
Method of preparation of Simple Potato roast
- Take the cubed potato pieces in a pan, add some salt for the taste and pour some water so that the potato pieces get immersed completely.
- Heat this pan on a medium flame, cook it till the potato pieces becomes tender.
- Drain the water and transfer the potato pieces to a mixing bowl.
- Now, add the fennel seeds powder, red chilli powder, turmeric powder and some salt for the taste. Mix it well.
- Heat some oil in a deep frying pan and add the garlic pieces and curry leaves.
- Saute it for few minutes and add the onion pieces, continue till the onions attain a transparent texture.
- Now, add the potato pieces and mix it well.
- Cook it on a medium-low flame so that the potato pieces get roasted to a reddish brown texture.
- It would take about 10 minutes, stir the contents in between.
- Once it is ready, transfer the potato roast recipe to a serving bowl.
- Serve it as a side dish for rice.
