Grandmas Christmas Plum Cake Recipe, Delicious Plum Cake with Dry Fruits
Christmas season is termed as the period of the year where our family members who have gone to faraway places for work would return to home, to be a part of Christmas festival. It’s the time of happiness for everyone, especially for us children as this is the time where we meet our cousins, friends, grandparents and close relatives. Paddy fields and playgrounds nearby would be occupied by children for playing cricket, football etc.
Our grandmother is famous for her delicious Christmas recipes which we cousins enjoy with pride. One of her preparations on Christmas eve, Christmas plum cake is one of the main attraction, as its rich flavour of grapes, cashews, dry fruits etc would be the one to savour. Even our neighbours would be there with us to taste this soft, fluffy and sweet plum cake. Our whole family would be present along with neighbours and friends, each one with their share of homemade wine would eagerly wait for the large Christmas cake to arrive. Grandfather would be the one charged with the responsibility to cut the cake for the first time, later my grandmother, mother and aunties take up the stake of slicing the mighty cake to moderate pieces.
We cousins one day after the Christmas eve have decided to ask our grandmother about the secret behind this delicious Christmas cake. We decided that this delicious dish should be known to all as its one of the rare dish which can be prepared by all of us at our home.
Ingredients Required
- 1 cup of Maida or Plain Flour
- 1/4 cup of Black Raisins (Munthiri)
- 1/2 cup of crumbled Cashew Nuts
- 1 and 1/4 cup of Sugar
- 1/2 cup of Dry Fruits (Cherries and Dates)
- 1/2 cup of Butter
- 2-3 eggs
- 1 teaspoon of Baking Soda
- 1/4 teaspoon of Cloves powder
- 1/2 teaspoon of Cinnamon Powder
- Pinch of Salt
- 1 teaspoon of Vanilla Extract
Method of Preparation of Christmas Plum Cake
- There are so many ways available for the preparation of plum cakes. For this plum cake, we make use of caramelised sugar as an ingredient.
- Take 1/2 cup of sugar in a pan and place it over low medium flame. The sugar slowly turns to a syrup solution, stir the solution in between.
- When the sugar fully melts to get the caramel solution, pour 1/4 cup of water, now the syrup solution will attain slight hardness, the solution starts to sizzle.
- Now, switch on the heat and wait for the crystalised sugar to dissolve. After 10 minutes, when the sugar crystals fully dissolved, switch off the flame and wait for it to cool, meanwhile, go on with the procedure involved in fruit cake preparation.
- Now, let’s preheat the oven to 350F / 180C temperature and make it ready.
- Take the dry fruits in a mixing bowl and add 3 tablespoons of plain flour mix it thoroughly. Keep it aside.
- The remaining flour is mixed with baking powder, spices and salt. Keep it aside.
- Now, take 3/4 cup of sugar in a bowl, add butter and mix it well. When it’s evenly mixed, add the vanilla syrup and stir it well. Then add one egg and mix it thoroughly. Again add some flour.
- In this solution, add the prepared flour mixture and mix it well. Alternatively, in between add one egg and add some quantity of mixed flour.
- Pour the prepared caramelized solution and the dry fruits mixture. When these ingredients are well mixed, transfer the solution to a circular bowl.
- Place the bowl in an oven and bake to get delicious Christmas cake dish.
