Traditional Cucumber Kichadi recipe
Cucumber kichadi is a delicious recipe served as a side dish with hot steaming rice. This curd based vegetable dish is usually prepared during special occasions like Onam festival and marriage functions. It is an easy recipe which takes an average of 25 minutes for its preparation. Kichadi recipes can be prepared with different vegetables like cucumber, ash gourd, papaya and bitter gourd. Sliced green chillies are used for a hot spicy flavour. Ingredients required
- 2 cups of Cucumber
- 1 cup of freshly grated Coconut
- 3-4 fresh Green chillies
- 1 cup of thick Yoghurt / Curd
- A sprig of Curry leaves
- ½ tablespoon of Coconut oil
- 1½ teaspoon of Mustard seeds
- Salt as per the taste
Method of preparation
- Wash the cucumber in running water and peel of its skin.
- Cut the cucumber into medium sized pieces and chop each portion into small pieces.
- Take the coconut pieces, 1 teaspoon of mustard seeds and ½ cup of curd in a mixer. Ground this into a smooth paste.
- Heat 1 cup of water in a pan and add the cucumber pieces and green chillies. Also, add some salt for the taste. Cover the pan with the lid.
- Once it is cooked well, switch off the heat and add the grounded coconut mixture and the remaining ½ cup of curd. Mix it well.
- Heat ½ tablespoon of coconut oil in a frying pan and add ½ teaspoon of mustard seeds.
- Once the seeds start to splutter, reduce the heat and add the curry leaves.
- Saute it for few seconds and transfer this content to the prepared cucumber mixture.
- Mix it well, traditional cucumber kichadi is ready.
- Transfer it to a serving bowl and serve it as a side dish for rice.
