You can even add fresh fruits and crunchy nuts like almonds, cashews etc. If you don’t like seeds in the pudding, you can blend chia seeds with the other ingredients to get a creamy consistency.

Chia Pudding Recipe

Ingredients:

  • Chia Seeds – 6 tbsp
  • Coconut Milk, Unsweetened – 2 cups
  • Vanilla Extract – 1/2 tsp
  • Honey (Optional) – 1 tbsp
  • few nuts like cashews, almonds for topping.

Instructions:

  1. In a bowl, add chia seeds, coconut milk, honey and vanilla extract. Mix well.
  2. Once the mixture is combined properly, set it aside for 5 mins.
  3. If there are clumps of chia seeds, then shake well. Cover the mixture and refrigerate it for 2 hrs or overnight.
  4. The chia seeds pudding should be thick and not liquid type. Add more chia seeds, mix it well and refrigerate it for another 30 mins, if its not think enough.
  5. You can also prep you pudding the night before and let it sit in the fridge overnight if that’s easier. Serve it with nuts topped.

Ingredients:

  • Yogurt – 2 cups
  • Chia Seeds – 2 tbsp
  • All purpose flour – 2 cups
  • Baking soda – 1/4 tsp
  • Baking powder – 1/4 tsp
  • Salt – 1/4 tsp
  • Sugar – 1 cup
  • Eggs – 3 no.
  • Vanilla – 1 tsp
  • Butter

Instructions:

  1. Preheat the oven to 350°. Add the yogurt, chia seeds in a small bowl and set aside.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder and salt.
  3. Beat the butter and sugar, using a electric mixer on high speed, until it turns soft for about 4 mins.
  4. Mix the vanilla extract and later add the eggs, while constantly stirring.
  5. Reduce the speed to low, and now add the dry ingredients in 3 batches, and 2 batches of chia and yogurt mixture.
  6. Bake the mixture in oven for about 20 mins until the cake comes out clean.
