Bonda or Fried whole wheat banana cake is an evening snack recipe which goes well with hot tea or coffee. Ghee is used for the preparation of this tasty banana sponge cake. Fried bonda has a dark brown colour and a delicious sweet taste. The use of jaggery and small bananas (Palayam Kodam Pazham) provide a sweet taste. Few cardamom pods are used for a delicious natural taste. Fried coconut bits are used for a crunchy experience and a unique taste. Ingredients used for making Bonda or Fried whole wheat banana cake
- 1½ cup of whole wheat flour or atta
- 3/4 cup of grated jaggery
- Water as per the requirement
- A pinch of salt
- 2-3 medium sized Small Banana or Palayam Kodan Pazham
- 1/4 teaspoon of baking soda
- 3-4 pods of cardamom (powdered form)
- 1/4 cup of finely chopped coconut bits
- 1 teaspoon of ghee
- Oil for frying

Method of preparation of Bonda or Fried whole wheat banana cake
- In a pan heat some water and add the jaggery. Upon heating, the jaggery melts to form a dark brown coloured solution.
- In order to remove the dirt, pour the solution through a fine sieve.
- Crush the banana pieces and add the jaggery solution.
- Now, add the cardamom powder, baking soda and salt. Mix the solution well.
- Little by little add the wheat flour and mix it well to form a light brown coloured batter.
- Roast the ghee in a frying pan and add the finely sliced coconut bits.
- Once the coconut bits attains a light brown colour, take out from the pan and add this to the prepared batter. Mix it well.
- Keep this batter aside for about 1-2 hours.
- After 2 hours, heat the oil in a frying pan. Take out a lemon shaped piece from the batter and add it to the oil for frying. (Dip your hands in water before touching the batter). Also, reduce the flame to a light-medium level.
- Once the bondas are fried to a brown colour, take it out from the oil and keep it on kitchen tissue for removing the excess oil.
- Serve this delicious dish as an evening snack along with a cup of tea or coffee.
