Brinjal Stir Fry, Ennai Kathirikai, Kathirikka mezhukkuvaratti

Brinjal stir, Ennai Kathirikai or Kathirikka mezhukkuvaratti is a famous dish from the South Indian states of Tamil Nadu, Kerala and Andhra Pradesh. This is a unique brinjal recipe coated with a tangy, spicy mix of flavours will have a dark brown texture, would go well with white rice and Chapatti. Brinjal as we know is a readily available vegetable which can be cooked within 20-30 minutes. The use of tamarind extract imparts a tangy flavour which merges well with spicy masalas used in this recipe. Ingredients Used
  • 4-5 medium sized Brinals / Kathirikai (Diced to medium sized pieces)
  • A small gooseberry sized Tamarind piece (Tamarind paste can also be used)
  • 1 tablespoon of Oil
  • A pinch of Mustard seeds
  • 1-2 dried Red chillies (Slit it to 2-3 pieces)
  • A sprig of Curry leaves / Karipatha leaves
  • ½ tablespoon of Asafoetida
  • ¼ tablespoon of Turmeric powder
  • 1 tablespoon of Sambar Powder
  • Salt for the taste

Preparation
  • Take out the gooseberry sized tamarind piece and soak it in warm water. Wait till it forms a brown coloured tamarind mixture.
  • Heat some oil in a pan and once it gets hot, add the mustard seeds and wait for it to splutter.
  • Now, add the dry red chilli pieces and stir fry for few seconds.
  • Add the curry leaves and ½ tablespoon of asafoetida, mix it well.
  • Put the diced brinjal pieces and mix it well and add ¼ tablespoon of turmeric powder and some salt for the taste.
  • Keep the flame in a medium state and slowly mix the ingredients, add 1 tablespoon of sambar powder, close the lid of the pan and cook it for 5 minutes.
  • Now, pour the prepared tamarind juice and cook it for 5 minutes. Close the lid of the pan and cook it for 5 minutes.
  • Once the brinjal’s are cooked, remove the lid and add 2 tbsp. of oil and fry it for 5-10 min.
  • Stir the mix occasionally, so that it doesn’t stick to the bottom of the pan. Add oil if necessary. Once the mix gets a golden brown color, you can turn off the flame.
