Here is an authentic recipe for Classic Christmas Cake that you can easily make at home
Ingredients
- Flour- 270 gm
- Sugar – 250gm
- Butter – 250 gm room temperature
- Eggs- 5 separated,room temperature
- Vanilla essence – 1 tsp
- Almond essence – 1 drop
- Caramelised sugar – 4 tbsp
- Milk – 30 ml
- Baking powder – 1 tsp
Soak the following ingredients in an orange juice and alcohol and refrigerate for 2 days,or 2 weeks or up to one month
- Cashewnuts and almonds diced – 50gma each
- Brown raisin, seedless,chopped into small bits – 5- to 75 gms
- Black raisins,chopped finely -50gm
- Dates sliced – 50 gm
- Glace cherries -50 gm chopped
- Tutti frutti- 50 gm
- Shahi jeer – 1/2 tsp powdered
- Cinnamon – half inch piece powdered
- Cloves – 2 powdered
- Nutmeg and mace – a pinch
- Dry ginger – a pinch
- Juice of half orange
- sugar – 3 tsp
- Vodka/rum/brandy/whiskey – 2 tsp
- Orange rind – 1 tsp
- Method
- Sift flour and baking powder thrice.
- Cream butter until soft and creamy
- Gradually add sugar and beat until the sugar has melted and the mixture turns pale
- Beat the egg whites well.
- Beat egg yolks separately

Method

- Dust all the presoaked dry fruits with 1-2 tbsp flour or icing sugar,Dust and shake
- In a pan, tip in the sugar to caramelise.
- Keep stirring the sugar as it turns liquid and a deep golden brown.
- Add the liquored dry fruits to the caramelised sugar syrup
- Pour this mixture into the creamed mixture.
- Add beaten egg whites and stir gradually with a wooden ladle
- Ad sifted flour in three batches,alternating with the beaten egg yolks,milk and vanilla essence and almond essence
- Stir well to incorporate. Pour into a greased and floured cake pan lined with greased butter paper
- Bake at 180 degrees C for 40 minutes.Check from 35 minutes onwards
