Kambu Koozh, Traditional Pearl Millet Porridge recipe
Kambu Koozh is a traditional dish prepared from pearl millet, popular among the people from Tamil Nadu – ‘Kambu’ means pearl millet and ‘koozh’ means porridge. It’s popularly served during the summers and is considered healthy because it has high water content, is easy to digest and is anything but fattening. Ingredients used in Kambu Koozh
- ½ cup of Kambu (Pearl Millet)
- 2 cups of Water or Milk
- ½ cup of Curd
- Salt for the taste

Method of preparation
- Take the millet in a flat surface plate and remove any grass particle or stones if any.
- In a wide open bowl, take some water and soak the millets for half an hour.
- Rinse it well and drain off the water.
- Transfer the millets to a mixer and add half cup of water, grind it to form a coarse mixture.
- Keep it overnight or for a minimum of 6 hours.
- Use an earthen pot for cooking the millets, heat the earthen vessel and add the millet mixture.
- Add some salt for the taste, use a wooden ladle and stir the mixture.
- Add one cup of water or milk and keep stirring continuously on a medium flame for five to seven minutes till it is evenly cooked.
- Use more water to get the desired consistency.
- Once the Kambu Koozh or Pearl Millet Porridge ready, serve it hot with curd or pickle.
