Saffron is often called golden spice’.It gives a rich color and exquisite flavour. The dried spice is generally regarded as the most expensive spice.It is the dried stigma and style top of a plant.Saffron is the most expensive spice in the world and is used quite extensively in a lot of cuisines. Its unique flavour and colour make it a wonderful spice to use in food as well as beverages
Ingredients for making saffron rice
- Low fat butter (unsalted) -2tbsp
- Basmati rice,rinsed and drained – 2 cups
- Saffron threads – 1 tsp (soaked in 1 tbsp lemon juice mixed with 2 tbsp warm water)
- Chopped dill – 1 cup
- Dried currants – 1/4 cup soaked in 1 tbsp lemon juice mixed with 2 tbsp warm water
- Coriander leaves chopped – 1 cup
- chopped – tarragon – 1/4 cup
- Roasted and chopped almonds and pistachios – 1/2 cup
- Black peppers – 2 to 3
- Salt to taste
Methods
Bring two and half cups of water to boil. Melt butter in a saucepan and stir in rice,making sure grains are well coated. Stir in boiling water, salt and pepper,then cover and cook over very low heat for around fifteen minutes.
Remove the pan from heat. Pour saffron water over one quarter of the rice in the pan, leaving the majority of it white. Cover the pot with a clean tea towel and a tight fitting lid. Set aside for tea minutes.
Spoon the white rice into a large serving bowl. Drain currants and stir them, Then mix in herbs and most of almonds and pistachios. Fluff saffron rice with the fork and gently fold it into white rice. Scatter remaining pistachios on top. Serve warm
