Apart from gooseberries, this wine recipe involves few more ingredients like jaggery, raisins, cloves, cardamom, black pepper powder and water. The use of spices would add up the flavour and it gets combined well with the sweet taste of jaggery. Method of preparation of traditional gooseberry wine
  • Use a mixer grinder in making a fine powder of the ingredients like cloves, cardamom, cinnamon and pepper.
  • Also, crush the jaggery using the mixer grinder and keep it aside.
  • Wash the gooseberries in clean water. Spread it on a dried and clean cloth for some time, so that the gooseberries get perfectly dried.

Gooseberry wine

  • Add one layer of gooseberries on a glass or porcelain jar. On top of these gooseberries, add some portion of crushed jaggery, powdered cloves, cardamom, cinnamon, black pepper and the raisins.
  • On top of this, add another layer of gooseberries. Top this with some portion of crushed jaggery, raisins and the powdered spices. Repeat this process till the whole of gooseberries get finished.
  • At the end, add the water and close the lid of the jar. Also, cover the lid with a piece of cloth and tie it with a string.
  • On the next day, open the lid and stir the contents with a wooden spatula. Cover the lid and keep it aside. Repeat this process for 2 more days.
  • After 3 days, the airtight container should be kept in a dark place.
  • Open the jar after 41 days and strain the mixture to get the brown coloured wine. (Do not squeeze the gooseberries as it is not good for the wine)
  • This wine can be served and stored for many years.
