Healthy ,quick and delicious soup – Mixed vegetable soup
Beetroot,carrot and spinach soup is a healthy, quick and delicious soup. Beetroot adds colour to this soup which is made of seasonal vegetables
Ingredients
- Ghee /butter – 1 tsp
- Celery – 1 stick
- Bay leaf – 1 no
- Carrot – 1 no
- Beetroots – 4 nos
- Potato – 1 no
- Water – 2 litres
- Spinach -75gms
- Lemon juice – 5ml
- Salt
- Black pepper powder – 1/4 tsp
- Fresh dill – 1 tsp
- Yoghurt – 2 tbsp
- Fresh parsley – 1 tsp
Method
- Wash all vegetables, peel and cut the beetroot,carrot and potato in small chunks (dices)
- Finely chop the parsley dill and celery
- Heat the oil in a large pan and saute the chopped celery until soft
- Add the bay leaf,beetroot,carrot,potato and water
- Cover ad simmer for about 40 minutes,until the beetroot is cooked
- Add the spinach and cook for 5 minutes more.
- Then add the lemon juice,salt,pepper,degi mirch and dill
- Serve hot,topped with a spoonful of yoghurt and garnished with chopped parsley
