Cooking -Karkidakam season special-Pumpkin flower stir fry(Mathan poov thoran)
Here is a small and easy method to make Pumpkin flower stir fry also known as Mathan poov thoran in Kerala.This Kerala special is prepared during Karkidakam season.
How to prepare Pumpkin flower stir fry?
- Pumpkin flowers-8
- Grated coconut-1cup
- Cumin-Quarter tsp
- Green chilli-1 or 2
- Coconut oil-3 tbsp
- Mustard seeds-Quarter tsp
- Red chilli,dried and broken- 1
- Curry leaves- 2 to 4
Grind the grated coconut,cumin and green chillies in a mixer to form a paste of coarse stir fry(thoran) consistency,sprinkling a little salt water.Wash and clean the flowers,removing the stalks.Chop finely..Heat coconut oil and splutter the mustard seeds,add the dried broken red chilli, and curry leaves.Once fried,add the coconut mixture.
When this is heated ,add salt .Now add the chopped pumpkin leaves and stir.Sprinkle 1 to 2 tbsp water.Cover and let this cook in the steam over low heat for 10 minutes.Remove the lid,stir and cook in an open pan for 5 to 8 minutes.Serve hot!
The same dish can be made with Kodappan(Banana flower core).
