Delicious and sweet Somas recipe

Delicious and sweet Somas recipe is one a traditional dish prepared during Deepavali / Diwali season. Different varieties of somas recipes are popular among the people of South India. Even though the base is same for all the somas varieties, the stuffing would vary as we move through different regions of Tamil Nadu, Andhra Pradesh and Maharashtra.  This delicious crispy sweet is known by the name Somas or Karchikai or somasi in Tamil Nadu, Kajjikayalu in Andhra Pradesh and karanji in Maharashtra. This simple sweet requires Maida and Rava for the base preparation. Fried gram dal and grated coconut are the essential ingredients used for stuffing. Natural flavour comes with the use of a whole of cardamom. Have a look at the list of ingredients and the method of preparation of sweet Somas dish.

Ingredients
  • 1 cup of Maida
  • 1 tablespoon of Rava
  • 1 tablespoon of hot and melted Ghee
Ingredients for inner stuffing
  • ½ cup of fried Gram Dal
  • ½ cup of Coconut
  • 1 whole Cardamom
  • ½ cup of Sugar

Method of Preparation
  • Take out a wide open mixing bowl and add the maida, rava and some salt for the taste.
  • Use your hands and mix the ingredients well. Now add the hot ghee and mix it well.
  • Little by little add some water and knead the mixture to soft pliable dough. Continue kneading for further 10 minutes.
  • Keep it aside for a minimum of 1 hour, also cover it with the lid.
  • Now, roast fry the gram dal for few minutes, once an aroma arise, cool it down and grind it to fine powder.
  • Take a mixer and ground the sugar and cardamom to a fine powder. Keep it aside. Dry roast the grated coconut to a light golden texture. Keep it aside for cooling.
  • Now, add the fried gram dal powder and powdered sugar. Also, add the roasted coconut once it cools down completely. Mix it all and keep it aside.
  • Take out a lemon sized piece from the dough, roll it to a thin circle. Cut these into small thin shaped circles.
  • Add 1 tablespoon of prepared sweet stuffing and grease the half side with little water. Pull the other side and close it to form a semicircle.
  • Apply some pressure on the greased side and join it well. Now, take a somas cutter and dip it in the flour and trim the joined greased sides of the semi-circular dough roll.
  • Seal the trimmed side so that it does not open while frying. Repeat the process until the whole of the dough is made into semi-circular stuffed pieces with trimmed side.
  • Heat the oil in a deep frying pan. Once it is hot enough, add these semi-circular stuffed pieces and fry it to a light golden colour.
  • When it is fried well, take it off and place it on a tissue paper. This would help to drain the excess oil.
