Traditionally the rice used for this payasam was a local variety called adhikarazhi ,unakkalari nellu (rice) which has a red tinge.  Since it was hand-milled without without parboiling the bran improved the tone of the red tinge even further.  South Indian shops sometime stock this rice.  However, a passable payasam can also be made with ordinary rice

Ari Payasam Ingredients

  • Red rice – 250 gms
  • Milk – 4 liters
  • Unsalted butter- 100 gms
  • Sugar – 2 and 1/2 cups

Ari Payasam – Red Rice Dessert preparation

  • Wash rice,drain and place in a pan with 1 litre  milk and 2 litres water,and cook till half done
  • Add butter and cook,stirring constantly,for 5  minutes.
  • Add sugar and keep stirring till dissolved.
  • Stir in remaining milk and cook till it thickens,stirring occasionally.  The consistency should be that of a thin porridge.
  • Remove from heat and serve hot.
  • Note : You can cook the rice with 1 litre  water in pressure cooker for 15 minutes and continue as given.  Add all the milk after dissolving sugar
