Ghee Roast, Ney Roast or Ney Dosa

Ghee Roast, Ney Roast or Ney Dosa is a traditional breakfast dish popular among the people from South India. It is a wafer thin, crispy dosa variety with a golden brown colour and usually served in a cone or rolled shape. As with the case of other dosa varieties, ghee roast is also served hot with chutney and sambar. Kids love this dish as it has a crispy texture with a delicious ghee flavour. Ghee is one of the main ingredient in this dish and it gives away a unique flavour and aroma. Ingredients Used
  • 1 cup of Raw Rice
  • ½ cup of whole Black Lentil / gram (Urad Dal)
  • A pinch of Fenugreek Seed
  • Salt as per the taste
  • 1-2 teaspoon of Sesame for greasing
  • Ghee as per the taste

Method of preparation
  • Wash the rice, black lentil or urad dal in clean water.
  • Soak the rice, Urad dal and the fenugreek seeds for 3-4 hours.
  • Keep it overnight or for 8-12 hours in a room temperature and this would help in fermentation.
  • Once it gets fermented, add some salt for the taste and use some water if required. Mix it really well. The consistency should be a little thinner as it would make thin and crispy dosas
  • Heat a tawa in a medium flame and grease it with some oil.
  • Once the tawa is hot (if we get an oozing sound on sprinkling some water), pour 1 ladle of dosa batter in the middle.
  • Use the back of the ladle and flatten the dosa batter to a big and thin circle. Now, add some ghee around the dosa.
  • After 5-10 seconds, use the back of the ladle and slowly flatten the portions where we have more batter. After 1-2 minute, the bottom portion of the dosa gets cooked.
  • Use a spatula and make a cut from the centre to the side of the dosa. Use a low flame and wait for the dosa to become crispy and attains golden brown colour in the bottom side.
  • Now, take out one edge of the dosa where we have made a cut and roll it to form a cone shape.
  • Serve this hot Ghee Roast, Ney Roast or Ney Dosa with sambar and chutney.
