Jackfruit Ice Cream
I had been to Madagascar lately with my family for a mini-vacation. Basically, Madagascar is an island in the southeast coast of Africa. A home to thousands of animal species found nowhere else, but here. Its kinda like a zoo, but without the closed cages. I would find it difficult to digest, if I don’t mention the beautiful rainforests, beaches and reefs. The official language of the island is French and Malagasy. Madagascar is the 4th largest island in the world. Now I’m trying hard to make this blog a little cooler, by stating the geographical facts! Don’t mind.
Now coming back to the protagonist of my story; Jackfruit Ice Cream. While I was strolling through the streets of Antananarivo, passing through the beautiful wooden houses and royal tombs. I came across this ice cream vendor. It was this beautiful ice cream van, where an old guy starts his music and drives into the city. You all must be aware of the legendary character from the town of Hamelin, Germany. The character was dressed in multicolored clothing, who was a rat-catcher hired by the town to lure rats away with his magic pipe. When the citizens refused to pay for his service, he retaliates by using his instrument’s magical power on their children, leading them away as he had the rats.
So this, ice cream vendor also was the same, but nothing to do with stealing away the children. When his ice cream van used to come, hearing the music, the children used to come filled with joy to have their favourite ice-creams. The child in me had never left, even at the age of 38. I ran with the kids for having some ice-creams. One of my neighbour who had been to Iceland, last week had told me to try the Jackfruit Pizza. Well, I did look for those, but didn’t find any.
Luckily I came across this Jackfruit Ice Cream, and I loved it to the core. If you don’t know what jackfruit is, they’re the heaviest fruit you can find in this world (No offense to all the fat people out there). In my hometown, most of the houses have these huge jackfruit trees in the backyard. And the best thing about these trees are, once it start giving fruit, it will continue until it die. I always had this profound weakness towards this gigantic fruit, I always tried to grab them, whenever I came across one. You know its riped, when you get that intoxicated smell.
After coming back to my home in California, I searched through Google, for Jackfruit Ice Cream recipes, but never found one. That’s when I decided to write this blog and the recipe, which I created with trial and error experiments and finally got the correct one. Jackfruit Ice Cream Recipe
- Ripe Jackfruit – 250 g
- Sugar – 100 g
- Whipping cream – 200 g
- Coconut milk – 200 g
- Add jackfruit pieces and sugar in a medium sized pot.
- Cook these items on a low flame for 30 mins.
- Make a puree with cooked jackfruit, once cool. Set it in refrigerator. (Puree is a smooth cream of fruits or vegetables)
- Add whipping cream, coconut milk and sugar in a bowl. Mix well.
- Add the jackfruit puree to this mixture. Refrigerate it for at least 2 hours or overnight.
- Freeze baking dish, then pour the mixture into it. Freeze for about 45 mins.
- Take it out, break up frozen bits with whisk or spatula. Repeat this process at 30 minute intervals until it’s nearly impossible to break apart anymore.
- Add the mixture in containers and place in freezer until ready to serve. Enjoy Jackfruit ice cream.
