Mixed Vegetable Poriyal

Poriyal is an authentic recipe from the South Indian state of Tamil Nadu. Mixed vegetable poriyal is a dry dish which is usually served as a side dish for lunch or dinner with rice and some curry. Washed and cleaned vegetables are chopped to small pieces and are cooked with freshly grated coconut pieces for a unique aroma and flavour. Poriyal can also be made with a single vegetable or multiple vegetables of your choice. The name of each poriyal recipe varies in accordance with the list of vegetables selected for its preparation.  This is one of the most popular poriyal recipe which involves some of the common vegetables like carrot, beans, green peas, radish and cabbage. Ingredients
  • 2-3 cups of finely chopped vegetables like Carrots, Beans, Green peas, Radish and Cabbage.
  • 1-2 finely chopped Green chillies
  • ¼ cup of grated Coconut
  • Salt for the taste
For tempering
  • 1 tablespoon of Oil
  • ½ teaspoon of Mustard seeds
  • 1 teaspoon of Split black gram /Urad dal/ Uzhunnu Paruppu
  • 1-2 dried Red chilli
  • A sprig of curry leaves
  • A pinch of Asafoetida / Hing / Kayam

Method of preparation
  • Heat some oil in a pan and add the mustard seeds, wait for it to splutter.
  • Now, add the dried red chilli, split black gram, asafoetida and curry leaves.
  • Add the finely chopped onion pieces and green chillies and saute the mixture till the onion becomes soft.
  • Take the chopped vegetable pieces and add it to the pan, sprinkle some salt for the taste.
  • Mix it well and cover the lid of the pan. Cook it for 5 minutes and if it becomes over dried, sprinkle few drops of water. (The use of water and the time for cooking depends on the type of vegetables used in the recipe)
  • As the final step, add the freshly grated coconut pieces to the cooked vegetable pieces and mix it well.
  • Simmer it for few seconds and switch off the flame.
  • Serve it as a side dish for rice or chapatti.
