Muringayila Thoran, Drumstick leaves recipe
Muringayila or Drumstick leaves are known to be the richest natural source of beta carotene, when compared to all other green leafy vegetables. Nutritionists would agree to the fact that the intake of these leaves at least ones in a weak would provide you with the necessary calcium, iron and vitamin C requirements for a healthy body. These leaves have a slight bitter flavour and it gets reduced while cooking. In Kerala, many of the households in rural areas have drumstick trees in their backyard.
Muringayila thoran or Drumstick leaves recipe with grated coconut is a traditional recipe popular among the people from the South Indian state of Kerala. The use of chilli powder or sliced green chillies imparts a hot spicy flavour and the presence of turmeric powder gives away a greenish yellow texture. Grated coconut piece nullifies the slightly bitter flavour of these leaves and adds up its taste. Garlic pieces, cumin seeds and curry leaves combines well with the recipe and provides a unique natural aroma. Ingredients used in Muringayila Thoran, Drumstick leaves recipe
- 5 cups of fresh Drumstick leaves
- 1 cup of grated Coconut
- A pinch of Turmeric powder
- ½ teaspoon of Mustard seeds
- A pinch of Red Chilli powder
- 2 dried Red Chillies
- 1 teaspoon of Cumin seeds
- A medium sized Garlic clove
- 1 sprig of Curry leaves
- 2½ tablespoon of Coconut oil
- Water as per the requirement
- Salt for the taste
Method of Preparation of Muringayila Thoran, Drumstick leaves recipe
- Clean the drumstick leaves and wash it in clean water. Keep it aside.
- Use a mixie and grind the ingredients like grated coconut, garlic, cumin seeds, turmeric powder, chilli powder and some salt to a coarse mixture. (Water is not required for grinding and be careful so that the mixture won’t be turned to a fine paste)
- Now, heat 2 tablespoons of coconut oil in a heavy bottomed pan.
- Add the mustard seeds and wait for it to splutter. Add the finely sliced shallots, dried red chillies and the curry leaves.
- Stir fry it for some time as the colour of the finely sliced shallots pieces would change to a light brown texture.
- Now, add the cleaned and washed drumstick leaves and saute it for few minutes. Use a low flame in cooking.
- Add the coconut mixture and mix it well with a long spoon or spatula.
- Sprinkle some water over the mixture and cover the pan with the lid. Use a low flame and cook it for 3-4 minutes.
- Now, remove the lid and continue cooking till the water content gets fully removed through evaporation.
- Finally, pour a ½ tablespoon of coconut oil over the recipe and cover it with the lid.
- Turn off the flame and keep it for further 5 minutes.
- Nutritious drumstick recipe is ready, serve it hot as a side dish for boiled rice.
