Spinach soup recipes – Vitamin rich vegetables soup
Vegetable spinach clear soup is a refreshing and comforting soup recipe which can be prepared easily with a small set of spice and vegetable ingredients. Typically, this soup will take about 20 minutes for its preparation. This nutritious and healthy vegetable soup is so clean and Ginger, green chilly,tomato and garlic presence provide a real natural flavour.Have a look at the ingredients used and the preparation of this vegetable spinach soup
- Fresh spinach chopped – 3 cups
- Tomato chopped – 1
- Green chilly chopped – 1/2
- Garlic – 3 cloves
- Salt – to taste
- Cashew nuts – 1/4 cup
- Water – 1/2 cup
- Coconut oil – 1 tsp
- Chopped cashewnuts and chilly flakes – to garnish
- Cumin seeds – 1/4 cup
- Fennel seed – 1 tbsp
- Bay leaves -2
- Cardamom – 2 tbsp
- Black pepper corns – 1/4 cup
- Cloves – 1 and 1/2 tsp
- Cinnamon sticks broken – 3
- Nutmeg – a pinch
- Mace chopped – 1 tsp
First prepare Kashmiri garam masala.
- For this,heat a small pan over medium heat,add cumin,cardamom,bay leaves,peppercorns,cloves,fennel seeds,mace and cinnamon sticks and dry roast until fragrant comes.
- Allow it to cool,adding nutmeg.
- Grind the spices into a fine powder. Store in an airtight container. From this take half a teaspoon for this soup
- Wash and chop spinach.
- Soak cashew nuts in half cup of water
- Blend spinach,tomato,garlic,chilly and soaked cashew nuts with half cup of water till well pureed.
- Heat pan on medium heat,add one tsp coconut oil and half teaspoon kashmiri masala,salt and mix well till you can smell the aroma.
- Add the blended spinach puree and cook on medium heat till it comes to boil
- Serve hot topped with chopped cashew nuts and chilly flakes
