Mutton Pilaf – Popular Pulao – Delicious light and nutritious
Delicious,light and nutritious,rice pilaf is the perfect meal to add to any menu. Pilaf /pulao and similar dishes are common in West Asia and usually rechristened pulao back home in India
Mutton Pilaf Ingredients
- Mutton/lamb chops pricked – 1
- Rice – 2 cups Washed and soaked
- Black cardamom – 4
- Peppercorns – 1 tsp
- Green chillies – 6
- Grounded garam masala – 1 tsp
- Cloves – 6 nos
- Cinnamon sticks broken – 1 inch piece
- Oil – 4 tsp
- Onions – 1 to 1/2 cups sliced uniformly
- Salt – 2 tsp
- Ginger paste – 1 tsp
- Beaten yoghurt – 1 cup
- Hot water – 2 cups
- Food colour – pinch
- Fried onions for garnishing – cup
Method
- Heat the ghee in a pan and add cardamom,peppercorns,red chillies and cloves
- When they darken a bit, add the onions and cook till transparent
- Add ginger garlic paste and 1 tsp of garam masala powder
- Add the meat,salt,chillies and curd and mix well
- Stir fry till meat is opaque and add 2 cups of water
- Bring to a boil and lower the heat and cook covered till meat is tender
- Add rice to it and mix liquid,meat and rice together. Bring to a boil,lower the heat and cook covered for 10 minutes
- Sprinkle the colour dissolved in a tsp of kewra water and continue to cook for few minutes more
- Garnish it with fried onions and serve hot with mint sauce
