  • 1/2 teaspoon of Cooking oil
  • 3 finely sliced Garlic cloves
  • 1 teaspoon of finely sliced Ginger pieces
  • 3 tablespoon of finely chopped onion
  • Finely chopped white portion from 2 Spring Onions
  • 2 cups of finely chopped vegetable (Capsicum, Carrots, Beans, Cauliflower)
  • Finely chopped green portion from 2 Spring onions
  • 1/2 – 1 teaspoon of pepper powder
  • Salt for the taste
  • 4-5 cups of water
  • 2 teaspoon of cornflour/Cornstarch mixed in some water

Method of preparation of Vegetable clear soup
  • Heat some oil in a sauce pan. Add the ginger, garlic and onion pieces.
  • Also add the white portion of the spring onion and saute it for few minutes.
  • Now, add the vegetables and continue sauteeing for 4-5 minutes.
  • Pour some water and cook the vegetables until they are finely cooked.
  • Add some salt for the taste.
  • Also, add the pepper powder and the cornflour/cornstarch water. Mix it really well. The addition of cornflour/cornstarch adds the thickness.
  • Add the green portion of the spring onion and heat it for few minutes.
  • The simple vegetable clear soup is ready, serve it hot.
