Sweet and soft Boli or Poli recipe

Boli is a dessert recipe popular in the Southern parts of India. This sweet flat bread is also known by the name ‘Poli’. Boli or poli is usually prepared during special occasions like festivals and weddings. Different versions of boli recipe are popular among the people from Kerala and Tamil Nadu. All-purpose flour (Maida) is the main ingredient used in this recipe. The use of grated jaggery or sugar imparts a sweet flavour. Fine flour of Chenna dal or Bengal gram is used for making the stuffing.  The use of turmeric powder gives away a yellow colour. Delicious boli recipe is usually served with payasams. Ingredients used for making Boli or Poli
  • 1¾ cups of All-purpose flour / Maida
  • 2 cups of Bengal gram / Channa dal
  • 2 cups of jaggery
  • ¼ teaspoon of cardamom powder
  • ¼ teaspoon of turmeric powder
  • 2-3 tablespoon of Ghee / Oil / Butter (for kneading)
  • Ghee / Oil / Butter for frying the bolis
  • Water for making the dough
  • A pinch of salt for the taste

Preparation of delicious Boli recipe
  • Take the all-purpose flour in a mixing bowl, add the turmeric powder and the salt.
  • Add some water and mix it to form a soft and dough.
  • Now, add the ghee / oil / butter and knead it thoroughly until the dough becomes pliable and soft.
  • Cover the dough with a kitchen towel and let it rest for some time. In the meantime, make the filling.
  • Heat some water in a pan and add the chenna dal for cooking. Boil it until the chenna dal becomes soft. (Note that the chenna dal shoudn’t be mashy)
  • Drain the water and powder the chenna dal using a mixie.
  • Heat this chenna dal powder in a pan along with jaggery and cardamom powder. The jaggery would melt and this results in a thick, gooey mixture. Take it away from the flame and keep it aside for cooling.
  • Start making lemon sized balls from this dal mixture. Also, make marble sized balls from the dough mixture. (Dal mixture balls should be bigger than the dough balls, this would give more taste to the recipe)
  • Take a dough ball and roll it into a small circle. Use the all-purpose flour to prevent stickiness.
  • Keep the sweet dall ball in the centre and cover it by bringing all the sides of the flat circular dough.
  • Seal it well and roll it again to form a circular shape. Now, place it in between 2 greased plastic sheets. Just press with your fingers till it expands to the desired circumference.
  • Heat a griddle and cook the bolis using some oil / butter / ghee.
  • Once we spot brown spots on both sides of the boli, take it away from the heat.
  • Serve this delicious boli during festivals, weddings or even for dinner.
