Ingredients used
  • 1 small cup or 200gm of Maida / All-purpose flour
  • 300gm of Jaggery or 250gm of Sugar
  • 1 teaspoon of Ghee
  • ½ cup + 250 ml of Water
  • 2 medium sized Eggs
  • ¼ teaspoon of Elaichi / Cardamom powder
  • ¼ teaspoon of Baking powder (optional)
  • Oil for frying
  • 1 teaspoon of Salt

Method of Preparation
  • Take the maida or all-purpose flour in a bowl and knead it well.
  • Remove any lumps and sprinkle some salt and baking powder. Mix it well.
  • Beat the egg and pour it to all-purpose flour.
  • Now, add 200ml of slightly warm water and 2 teaspoons of oil. Mix it well to form a smooth dough.
  • Take out some portion of the dough and roll it to small ball shaped dough pieces.
  • Use a chapatti presser and make it to a flat shaped sheet.
  • Make use of the specially designed cutter, pizza cutter or a normal spoon and cut through the flattened dough sheets making longitudinal and horizontal straight lines at about 1 inch in length and breadth.
  • Heat the oil in a frying pan and add each diamond shaped dough pieces for frying.
  • Deep fry it to a light golden brown colour and take it away from the oil. Keep it aside.
  • Now, boil the jaggery in water and once it becomes a brown coloured solution, drain it through a sieve to remove the sediments.
  • Add the cardamom powder to the jaggery solution and heat it till the solution attains a slightly thick consistency.
  • Now, immerse the fried diamond pieces in the jaggery solution and take it out to a greased plate.
  • When it becomes dry, serve this Sweet diamond cuts as an evening snack.
