Chowari or Sago pearls payasam is one of a sweet delicacy from Kerala cuisine. Sago pearls are similar in appearance to that of tapioca pearls and the two may be used interchangeably in some dishes.  Chowari or Sago pearls and Milk are the two important ingredients used in this dish. The presence of sugar or grated jaggery provides a delicious sweet flavour. A few strands of saffron is also used for a rich flavour and natural aroma. Roasted cashew nuts and raisins provides an added flavour and it combines well with the soft, mushy nature of sago pearls. Ingredients used
  • 1 cup of Chowari / Sago pearls
  • 3 cups of Milk
  • 3 cups of Water
  • 8 tablespoon of Sugar
  • Few saffron strands mixed in 1 tablespoon of Milk
  • Ghee for roasting
  • 1 tablespoon of Cashew nuts
  • ½ tablespoon of Raisins

Method of preparation
  • Soak the Chowari or Sago pearls in 2 cups of water, it would become soft and swell in 3-4 hours.
  • Pour the milk, 1 cup of water and the sugar in a pan, use a ladle and mix it well.
  • Drain and remove the water from the soaked Chowari and add it to the milk. Cook it on a medium flame.
  • Keep on stirring and cook it for 20 minutes. Once the mixture starts to thicken, Chowari gets cooked well.
  • Now, switch off the flame and add the soaked saffron to the mixture. Mix it well.
  • Heat the ghee in a pan and fry the Cashew nut and raisins to a light golden texture.
  • Add the fried cashew nuts and raisins to the cooked sago pearls mixture.
  • Keep it aside, so that the payasam becomes cold.
  • Once it is cold, transfer it to serving bowl.
  • Serve this delicious Chowari or Sago pearls payasam.
