Palak Coriander Spicy Chutney Pulao
How about a spicy chutney pulao for an adventurous food party? If you’re not really a fan of palak (spinach,you can readily replace it with pudina (mint)it does not change the final taste.
Ingredients
- Basmati Rice – 1 cup
- Palak (spinach) – 1/2 cup
- Coriander leaves – 1/2 cup
- Green chillies – 4
- Ginger – 1 inch piece
- Lemon juice – 2 tbsp
- Sugar – 1 tsp
- Coconut – 2 tbsp
- Garam Masala – 1/2 tsp
- Bay leaves – 2
- Cloves – 3
- Cinnamon – 1 inch stick
- Cardamom – 2
- Ghee/Oil – 1 tbsp
- Onion – 1 (big)
- Chopped Vegetables
- (Green beans,carrot,peas,cauliflower) – 1 cup
- Salt
Method
- Grind together palak, coriander leaves,green chillies, ginger, garlic,lemon juice, coconut, sugar and garam masala without water (if required,ad a little water)
- Heat ghee,add bay leaves,cloves, cinnamon, cardamom and garlic. Fry for a minute
- Add onions and fry till they turn slightly brown
- Add vegetables ad the ground paste – fry for five minutes
- Now add rice, toss and add one cup of water,salt
- Cover and let it cook till one whistle
- Can be served with onion raita
