Thai salad with celery
Ingredients
- Celery stalks – 4
- Spring onion sliced diagonally -2
- Green chilli thinly sliced – 1
- Coriander leaves -1/3 cup
- Small carrot – 1 grated
- Roasted peanuts – 1/4 cup
- Sunflower oil – 1 tbsp
- Lime juice – 1 tbsp
- Fish sauce – 1 tbsp (optional)
- Jaggery /salt and pepper – to taste
In a large bowl, toss together celery. spring onion, green chilli, coriander leaves and carrot Whisk oil, lime juice, fish sauce, jaggery. salt and pepper together in another howl for the dressing. Pour on the vegetables and stir gently. Sprinkle with peanuts and stir once before serving.
