Traditionally the rice used for this payasam was a local variety called adhikarazhi ,unakkalari nellu (rice) which has a red tinge. Since it was hand-milled without without parboiling the bran improved the tone of the red tinge even further. South Indian shops sometime stock this rice. However, a passable payasam can also be made with ordinary rice
Ari Payasam Ingredients
- Red rice – 250 gms
- Milk – 4 liters
- Unsalted butter- 100 gms
- Sugar – 2 and 1/2 cups
Ari Payasam – Red Rice Dessert preparation
- Wash rice,drain and place in a pan with 1 litre milk and 2 litres water,and cook till half done
- Add butter and cook,stirring constantly,for 5 minutes.
- Add sugar and keep stirring till dissolved.
- Stir in remaining milk and cook till it thickens,stirring occasionally. The consistency should be that of a thin porridge.
- Remove from heat and serve hot.
- Note : You can cook the rice with 1 litre water in pressure cooker for 15 minutes and continue as given. Add all the milk after dissolving sugar
