Cream Mushroom Soup – Diet for persons with diabetes
Ingredients
- Button mushrooms -300 grams
- Onions chopped – 1
- Garlic – 4 cloves
- Wheat flour- 1 tbsp
- Water – 1 cup
- Milk – 1 cup
- Butter – 1 tbsp
- Salt ,pepper powder – to taste
- Chopped coriander leaves -few
Method of preparation
Wash the mushrooms,dry them with a kitchen towel. Peel the outer skin and slice them
Heat butter in pan,add chopped onion and saute until it turns light brown. Add the minced garlic,sliced mushrooms and salt
Cook them until they turn soft,stir frequently in between. When the water is almost evaporated,remove 2 tbsp mushrooms from this and keep aside
Lower the heat and add wheat flour,stir and cook for a minute
Cook for 5 minutes. Remove from fire and cool it,blend it using a blender
Transfer the puree into the same pan. Boil it for 2-3 minutes until desired consistency. Turn off the flame and add the preserved cooked mushroos
Serve with chopped coriander leaves on top of the soup
